So maybe it was a coincidence, but I slept better last night than I have in a long time. I'm assuming it's unrelated, but the hope that this could help my exhaustion all the time is comforting. It makes me want to power through this and continue on.
Today was an easier day than yesterday.
Breakfast: 2 hard boiled eggs, no yolk & 2 1/2 slices of OM thick cut bacon. Coffee
Yes, I know the yolk is healthy, but I can't stand hard boiled egg yolk. Blech.
Lunch: My bosses took me out to lunch to a very yummy place called Damian's. The food was wonderful, and they had many GF choices. I had the Insalata Mista, which is just an Italian salad and for my entrée I had the Snapper Nino Jr. which was a grilled snapper with shrimp, tomatoes, mint and basil bianco. It came with a side of green beans and potatoes. I didn't realize the potatoes were part of the entrée, but I just pushed them aside and ate my fish and veggies.
Although, I did grab a delicious looking piece of herbed bread. As I put it on my plate, I remembered, "I can't eat that!!" I was strong.
Dinner: I had my husband pick the boys up, so I could stop by Costco on my way home. As a side note, why is it impossible to spend less than $200 at Costco??
Anyway.....
On the recommendation of a friend, I bought some very yummy chicken sausage. I sliced and pan grilled 2 links (one for lunch tomorrow) and then sauteed some red peppers, onions and cremini mushrooms in EVOO with a little salt and thyme. A wonderful and delicious dinner.
Snack: I'm not quite as hungry as I was yesterday. I had about 1/4 cup of roasted and salted macadamia nuts. This was the first time I've ever had macadamia nuts. They were quite tasty. I'm not normally a fan of nuts. (get your mind out of the gutter)
On to day 3.
