Long weekend!

I had a long weekend, and a decent bit of cheating, which I thoroughly paid for :(

Yesterday, I had a vermicelli bowl with no vermicelli for lunch, and baked chicken and salad for dinner.

Today, no breakfast again.
Lunch will be dim sum. I'll have the Chinese broccoli and possibly some shrimp dumplings. They have rice paper, so it'll be GF, but not paleo. I haven't quite decided yet...

Dinner will be leftovers from last night.

No breakfast again today. I just had coffee, and then had to hurry and get Jordan to a doctor's appointment. Poor guy woke up telling us his mouf hurt. He has strep :(

Day 9

Today I go to see Mamma Mia with some girlfriends! Yay!

Breakfast: Mushroom, onion & bell pepper omelet with a little cheese and a bit of sausage and 2 thin slices of bacon.

Lunch: Chicken salad from Chick fil a with buttermilk ranch.

I also caved and had about 1/3 of a Coke Zero today. VERY bad idea. My head is throbbing. I'm assuming from all the crapola they put in it.

Dinner: Damian's again! I'm thinking I'll have the Shrimp Damian and have them sub the fettuccine for some veggie. And of course, a glass of yummy wine.
Then it's on to Mamma Mia!

Day 8

Pants are a little loose today =)

I did not have time for breakfast this morning. Ben made me some coffee and had to go to work early, so it was just me and the boys.
I made them eggs, fried for the big kid and boiled for the little. Yes, I cater to them =)
...sometimes
We rushed and rushed and I handed them each a GoGurt (no HFCS!) as we went out to the car.

I actually made it to work on time.


Lunch- I had a few errands to run, so I stopped by Chipotle. I thought it would be hard to not have my rice and beans, but it was just as yummy as ever.
I had a steak & chicken bol. The steak wasn't great. I'm sticking with chicken next time. I had pico, red hot sauce, guac, a tiny bit of sour cream, & lettuce.
I really wanted to cheat and have an iced tea. I soooo miss iced tea. But since I NEED my morning coffee (with sugar), I decided that is my only sugar concession.

Dinner- Crock pot pork roast with sauteed cremini mushrooms and onions. I also had half an avocado, which the boys stole about half of ;-)

Snack-Sweet potato fries from Costco. I know these aren't exactly paleo. They have cornstarch and a few other non-paleo ingredients.
They also hurt my tummy. So I won't be having those again.

Day 7

Monday, May 9

Back to work. Of course, I'm scrambling and late this morning, so I didn't have anything for breakfast. I'm pretty hungry right now, as I have once again gotten used to eating a substantial breakfast of protein and fat.

Lunch: Sushi! Miso soup, tuna, salmon, escolar, mackerel sashimi with avocado slices on the side. Yummy.

Snack: About an ounce of almonds (raw)

Dinner: Ben made Bourbon Chicken. Pretty much the only thing he can make, but he does a GREAT job =) It was quite yummy. The sauce did have a bit of brown sugar in it, but I didn't have much sauce on mine. And I skipped on the rice, of course ;-)

Days 5-6

Weekend eating!

Saturday, we went to Lake Somerville to fish and picnic. We had a blast! I was a bit worried about it, since all our neighbors would be there and we'd be grilling hot dogs and have chips and beer. But I did well.

Breakfast- 2 scrambled eggs & sausage.

Lunch- Lunch was at the lake. I had some kielbasa from HEB, no bun. Oh, and I also had a couple hard apple ciders.

Dinner- For dinner, I used some of our beef order that I had picked up that morning. I grilled up some simple burgers, and had it topped with bacon and avocado. I also made some crab and bacon stuffed mushrooms (these did have a bit of Parmesan cheese on them, but I'm not entirely cutting out dairy.)

I also had another fudge ball. I'm totally in love with these things. SO yummy, perfectly sweet, and one is more than enough for me!


Sunday-Mother's day.

I woke up to coffee in bed. Lovely =)

Breakfast- I made myself an omelet with mushrooms, onions and red peppers and had 3 links of Hormel's little sizzlers (GF)

This breakfast kept me full for quite a while.

We all went to my sister's for Mother's Day dinner.
I don't even know how much I ate, but it was a lot. =)
I had deviled eggs, bacon wrapped shrimp, a few baby carrots, cajun roast chicken, and salad. It was very delicious and satisfying!

I was up a bit later than I normally am, so I got hungry around 10:30. I was lazy and just heated up some leftover breakfast sausage. I probably should have gone with something with a few more nutrients, but...meh =)

Day 4

So yesterday, I kinda screwed up a bit. I took Jacob to get his allergy shots, and of course, they get lollipops afterwards. I took one, ate it and didn't even THINK about it until after I had eaten it. It was just a tiny DumDum, but still. I've cut our all sugar except my morning coffee. (And small amounts of added sugar in bacon)

Breakfast: 2 scrambled eggs in bacon grease, about 3 thin slices of bacon

Lunch: Chicken Vermicelli bowl hold the vermicelli!

Dinner: Crab & avocado salad and a fudge ball. YUM

Day 3

Thursday, May 5

Today I learn the importance of fat in the paleo diet.
Breakfast: 3 hard boiled eggs, no yolk. NO bacon. Of course, I'm starvy 2 hours later.

Snack: 1 leaf of romaine lettuce with 6 slices of turkey breast (GF) and 1/2 an avocado. No need for condiments when avocado is present. yum.

Lunch: Lunch is last night's leftovers. Sausage & veggies. I didn't eat much of this, since I had my snack an hour earlier.

Dinner: Pan grilled chicken breasts seasoned with sea salt, season all and Worcestershire with a side salad loaded with veggies, avocado and bacon. This was topped with Hidden Valley ranch, which I believe is not GF, but it was all we had.

No evening snack! I was up until about 11:30, and I didn't get hungry again until about 11ish, but I didn't want to eat that late.

Day 2

Wednesday, May 4

So maybe it was a coincidence, but I slept better last night than I have in a long time. I'm assuming it's unrelated, but the hope that this could help my exhaustion all the time is comforting. It makes me want to power through this and continue on.
Today was an easier day than yesterday.

Breakfast: 2 hard boiled eggs, no yolk & 2 1/2 slices of OM thick cut bacon. Coffee
Yes, I know the yolk is healthy, but I can't stand hard boiled egg yolk. Blech.

Lunch: My bosses took me out to lunch to a very yummy place called Damian's. The food was wonderful, and they had many GF choices. I had the Insalata Mista, which is just an Italian salad and for my entrée I had the Snapper Nino Jr. which was a grilled snapper with shrimp, tomatoes, mint and basil bianco. It came with a side of green beans and potatoes. I didn't realize the potatoes were part of the entrée, but I just pushed them aside and ate my fish and veggies.
Although, I did grab a delicious looking piece of herbed bread. As I put it on my plate, I remembered, "I can't eat that!!" I was strong.

Dinner: I had my husband pick the boys up, so I could stop by Costco on my way home. As a side note, why is it impossible to spend less than $200 at Costco??
Anyway.....
On the recommendation of a friend, I bought some very yummy chicken sausage. I sliced and pan grilled 2 links (one for lunch tomorrow) and then sauteed some red peppers, onions and cremini mushrooms in EVOO with a little salt and thyme. A wonderful and delicious dinner.


Snack: I'm not quite as hungry as I was yesterday. I had about 1/4 cup of roasted and salted macadamia nuts. This was the first time I've ever had macadamia nuts. They were quite tasty. I'm not normally a fan of nuts. (get your mind out of the gutter)

On to day 3.

Paleo, Day 1

Tuesday, May 3

My first day paleo & gluten free. I've still yet to give up sugar, but I only use it in my coffee and it's in bacon, too =)
I am also eating small amounts of dairy, but I try to avoid it.

Breakfast-coffee with sugar
Lunch: Salad with Romaine lettuce, Applegate GF turkey (about 6 thin slices), 1/2 an avocado, and 1 1/2 tablespoons of Kraft ranch (GF).
Snack: 1 oz raw soaked almonds, 1 5 oz can of tuna in oil in a lettuce wrap with mayo.
Dinner: 2 scrambled eggs in bacon grease. 4 slices Oscar Mayer thick cut bacon (GF)
Snack: 2 slices of bacon on lettuce. A BLT with no bread, mayo or tomatoes :), 1/2 an avocado

I was pretty hungry most of the day. I know my body just needs to get used to not having grains and carbs. I powered through!
